As I wait for this year’s lamb (well, actually a Hogget) to arrive, here’s a nice pictorial, set-by-step guide to butchering the lamb carcass.

Even if you don’t do the butchery yourself (I don’t but will do the course one day) it’s a good way of understanding how all those chops n shoulders get from the beast onto your plate.
